Red velvet cupcakes

These have recently become a fashionable classic, and are ridiculously tasty! Rich, bright red tasty cupcakes topped with cream cheese frosting. You can top them with anything you want: vanilla buttercream, chocolate frosting, orange frosting…. Ooooh Orange would be tasty. Anyway, I did find that the Cream Cheese frosting I used was REALLY runny, it could have been the cream cheese I used, but if this happens to you just put in some more icing sugar.

INGREDIENTS
· 125ml/4 fl oz buttermilk
· 1tbsp red food colouring
· 115g/4oz butter, softened
· 175g/ 6oz caster sugar
· ½ tsp vanilla extract
· 1 large egg
· 200 g/7oz plain flour
· 1 tbsp cocoa powder
· ½ tsp bicarbonate of soda
· 1 ½ tsp white wine vinegar

WHAT TO DO!
1. Preheat the oven to Gas Mark 4/ 180˚C
2. Put the butter, sugar and vanilla extract in a bowl and whisk until fluffy.
3. Gradually whisk in the egg.
4. Sift in the flour and cocoa powder. Then fold it into the rest of the mix using a metal spoon.
5. Mix together the buttermilk and the food colouring. And then mix this into the rest of the mixture.
6. Mix the bicarbonate of soda with the vinegar, then stir into the mixture.
7. Line a muffin tin with muffin cases. And spoon into cases.
8. Bake for 20-25mins until firm.

NOTE: Don’t put too much into the cases as the mixture rises quite a lot and you’ll end up with them looking slightly like mushrooms… like mine did!


CREAM CHEESE FROSTING

INGREDIENTS
· 100g/ 3 ½ ox full-fat soft cheese
· 50g/ 1 ¾ oz butter, softened
· ½ tsp vanilla extract
· 225g/8oz icing sugar

METHOD
1. Put the soft cheese, butter and vanilla extract in a large bowl whisk until pale and fluffy.
2. Sift in the icing sugar and mix together by hand until smooth and creamy.
3. Put in a piping bag and pipe onto cupcakes.
