Scary monster eyeball cupcakes

As it is Halloween these monsters eyeball cakes would make a welcome addition to any Halloween party food table. Just bung all the ingredients in a bowl and add whatever you like to make the cakes more interesting and add flavouring to the icing which will compliment the cakes, again, to make them a little more exciting and spooky. Especially as the icing colour will not match the normal colour of the related flavour! So have fun, enjoy eating and Happy Halloween!
 

INGREDIENTS:

·         110g Self-Raising flour
·         110g caster sugar
·         110g butter
·         3 eggs
·         2 tbsp cocoa powder
·         1 tsp cinnamon

FOR ICING:

·         140g butter
·         280g Icing Sugar
·         Green (or blue, any colour will do) food colouring
·         Orange/mint/almond or some other flavouring if you want it
·         White chocolate buttons
·         Red and black coloured icing


METHOD:

1.       Preheat the oven to gas mark 3/170°C and line a muffin tray with 12 cupcake cases.
2.       Put the flour, butter, sugar, eggs, cinnamon and cocoa powder into a bowl and mix them together using an electric mixer.
3.       Spoon the mix into cupcake cases and bake for 15-18mins, until risen and cooked.
4.       To make the Icing: beat together the icing sugar and butter.
5.       Once it’s all mixed together add some food colouring and flavouring, if you want it, I used orange and it was yummy. Then put the butter icing into a piping bag and pipe it onto the cakes, or use a knife to spread it on the cake.
6.       Place on a white chocolate button onto the top of the icing and then pipe a small blob of red icing and then a small black blob onto the white chocolate button to create the centre of the eye.

TOP TIP: When making butter icing - which you are doing now - Mix together the icing sugar and the butter together with a fork, adding the icing sugar a spoon at a time, once it’s all mixed together use a hand mixer to add some air, otherwise it goes EVERYWHERE!!
