Crunch topped banana muffins

Banana muffins are a particular favourite of my family. Whenever we have some over-ripe bananas the ingredients get taken out and the muffins get baked. This is always a good thing in my book. My sister, being the clever thing she is, baked these tasty things. Honestly, they are SO good! The topping is filled with cinnamon, brown sugar and oats which all together make a lovely crunch and tasty cake. Next time I’m going to add some chocolate drops to make them even tastier and this mixture makes a LOT of cupcakes so don’t be afraid to make big ones!


·         195g of flour
·         1 tsp of baking powder
·         1 tsp of bicarbonate of soda
·         1 tsp cinnamon
·         ½ tsp salt
·         3 bananas (a little over-ripe is best)
·         1 egg
·         45g butter
·         150g chocolate chips

          FOR THE TOPPING:

·         45g brown sugar
·         2 tbsp flour
·         ½ tsp cinnamon
·         1 tbsp butter
·         2 tbsp oats


  1.  Pre-heat oven to Gas Mark 4/350°
  2. Mix and sieve together the flour, baking powder, bicarbonate of soda, cinnamon and salt.
  3. Then mix in the egg and butter and stir in with a metal spoon.
  4. Mash the bananas with a fork and mix into cake mixture – give it a final mix with a hand mixer, really quickly only 15-20 secs.
  5.  Pour out the cupcake mixture into the case lined try and put to one side.
  6. Mix together all topping ingredients in a separate bowl and sprinkle generously onto each cupcake.
  7. Bung the trays in the oven and cook for 18-20mins – stick a knife into the middle of the cake and if it comes out clean (minus a bit of chocolate) then they’re cooked.
