Lemon and maple syrup cupcakes

Whenever I get the urge to bake I like looking through the many cookery books in my house to find the perfect flavour. However, the problem with having impulsive urges to bake means we don’t always have the right ingredients. After finding a lemon in the fridge and some maple syrup in the cupboard, I set to work and created these little beauties, which I must say I’m rather proud of!

·         115g butter, softened
·         175g caster sugar
·         2 large eggs
·         Rind and juice of 1 lemon
·         A Squeeze (1 tbsp-ish) of maple syrup
·             175g self raising flour
·             1 tsp baking powder
·             3-4 tbsp milk
·             Glace icing with added lemon juice
·             Orange and lemon flavour decoration pieces
1.           Pre-heat oven to Gas Mark 4/180°C/350°F
2.           Line a muffin tin with 12 muffin cases
3.           Put the butter and sugar into a mixing bowl and whisk until pale and fluffly.
4.           Gradually add the eggs and whisk well.
5.           Add in the lemon rind and maple syrup and gave a small whisk
6.           Sift in the flower and baking powder and fold in using a metal spoon.
7.        Add the milk a little bit at a time and judge yourself how much you need – the mixture should be a little runny but still quite stiff.
8.           Spoon into the cases
9.        Bake for 20mins, after that stick a clean knife into a few of the cupcakes and if it comes out clean the cakes are cooked.
10.      Cool on a wire rack.
11.   Mix together the glace icing (icing sugar and water) add a little lemon juice and pour onto the cupcakes for decoration.

You can always add other flavours to this. Why not add some chocolate drops or even use chocolate buttercream for decoration? As long as you enjoy them!
