Super chocolate-y cupcakes.

These taste really chocolatey. In the past many of the chocolate cakes I’ve baked have been a disappointment. Not these however. These delicious cupcakes would make a great gift for friends or even your Valentine if they don’t mind them being a tad late. Or, you could even bake them with your Valentine... or friends for all those ‘Single Pringles’ out there… and have fun because you don’t have to be snogging 24/7 to show your love... If making these with friends, have a contest to make the most romantic looking cupcake, or other such nonsense.

·         115g butter, softened
·         175g caster sugar
·         2 large eggs
·         175g self raising flour
·         2 tbsp cocoa powder
·         1 tsp baking powder
·         3-4 tbsp milk
·         200g icing sugar
·         100g butter

1.           Pre-heat oven to Gas Mark 4 (or other equivalent temperature).
2.           Line a couple of cup cake muffin trays with cup cake cases.
3.           Cream together the butter and sugar with an electric whisk until pale and fluffy.
4.           Add the eggs a little bit at a time while still mixing.
5.           Sift the cocoa powder, baking powder and flour into the bowl and fold in using a metal spoon. Remember to scrap all the way down to the bottom.
6.           Spoon into the cupcake cases and spread the mixture out over 12-16 cases as they rise quite a lot so less is more in this case.
7.           Bake for 20mins and stick in clean knife when that time is up, if knife comes out clean then your cakes are cooked to perfection.
8.           Decorate with butter cream (200g icing sugar & 100g butter) and whatever else to make them look fabulous and yummy.
