Cookies and cream cupcakes- bring out your oreos

It was one of my friend’s birthdays on Saturday (Happy Birthday Matty!) and what do you get a 17 year old guy for their birthday? Food. Saying my friends are food obsessive would be like saying Genie quite likes shopping, or that I am a tad shorter than average. UNDERSTATEMENT OF THE CENTURY. Their life revolves around food and they are all bottomless pits. Therefore I have combined 2 of their favourite things; cupcakes (or just cake in general...) and cookies (or any form of biscuit). And even better? They're insanely easy to make.

·         70g soft unsalted butter
·         170g plain flour
·         250g plain caster sugar
·         50g cocoa powder
·         1 tablespoon baking powder
·         1/2 teaspoon of salt
·         210ml whole milk
·         2 large eggs
·         Biscuits of your choice. I used Oreos and needed just over a packet's worth. You need 1 biscuit per cake, so guesstimate appropriately.

1.       Place all dry ingredients (that's everything apart from the milk and eggs) into a bowl and beat with an electric whisk until combined.
2.       Mix the eggs and milk together with a fork, before adding half the egg/milk mix to the main mixture. Beat and then add the rest of the eggs/milk before beating again until combined and smooth. 
3.        Divide the mixture between paper cases. You'll need between 12 and 20. I managed to get 18 cakes.
4.       Cut your biscuits (I used Oreos but Maryland cookies also work well, or you can go the whole hog and make your own...) into quarters. Use a big knife and a sawing motion to avoid splitting. Place a biscuits worth on top of each cup cake.
5.       Place in a oven at 170 degrees for 25 minutes until the sponge bounces back when touched.

I covered mine with plain butter icing (mix butter and icing sugar with a whisk until joined and smooth. You may need a slosh of milk) and then used the crumbs from the biscuits to decorate them. However, as you’ve probably noticed, they look pretty cool without even the icing on top. They all went down a treat - so well in fact I was unable to get photos as my friends scoffed them like they hadn't eaten in days... It was 8:20 am.
