Honey bumblebee cupcakes

Hey y'all... I decided that I had to confront my demons and teach Belle to cook, even if it was cupcakes. We pretty much just went through the cupboard and found something that might have seemed like a good idea to put in a cake: honey. So, honey icing for our cupcakes it was.

This is the simplest way to make plain cupcake batter. Weigh 2 eggs (which should come to about 4oz) and then weigh out the same amount of sugar butter and flour. The rest of the ingredients? Well, you can see them in the pictures below, because I know we all love visuals!
  1. In your bowl put together the butter and sugar before sifting in the flour and adding the eggs.
  2. Beat all the ingredients together with a whisk and you're sorted!
  3. Line a tray with cupcake cases and fill with the batter.
  4. Bake at about 180 - 200 degrees until golden brown and springy to the touch.

I will warn you, I always make icing as an estimate so these will be terrible instructions...

  1. Add icing sugar and a small amount of butter together and whisk so they join. 
  2. Add a dollop of honey to the mix and whisk in. I will warn you, this icing is very sweet. If you like sweet things, add more honey and if you don't, add less. Simple as! Taste as you go to get the right sweetness.
  3. If you want to stiffen the mix, add more icing sugar and loosen it, and add a small splash of milk.
  4. Use a spoon or a palette knife to ice your cakes and decorate how you would like. I had some bumblebee cake toppers and some yellow edible glittery sprinkle stuff which I bought from Hobbycraft and sugar paper flowers which I think came from TKMaxx.
